  • 1 tablespoon Butter or coconut oil Melted
  • 1 tablespoon Sweetener Monk fruit, erythritol, or preferred low-carb option
  • ¼ teaspoon Baking powder For fluffiness
  • ¼ teaspoon Vanilla extract Optional for flavor
  • 1 pinch Salt Balances sweetness

  • Chocolate chips, berries, or nuts For flavor variation

Instructions

  • Mix almond flour, baking powder, sweetener, and salt in a mug.
  • Add egg, melted butter, and vanilla; stir until smooth.
  • Let batter rest for 30 seconds.
  • Microwave for 60–90 seconds until set.
  • Cool slightly, add toppings, and serve.

Notes

Customize with chocolate chips, berries, or nuts. Adjust microwave time based on your wattage. Letting the batter rest improves texture!
