Ingredients

  • 1 cup Old-fashioned rolled oats
  • 1 cup All-purpose flour
  • cup Brown sugar Light or dark
  • 1 tablespoon Baking powder
  • 1 teaspoon Ground cinnamon
  • ¼ teaspoon Salt
  • teaspoon Nutmeg Optional
  • 1 Large egg Room temperature
  • ¾ cup Milk Dairy or non-dairy
  • ¼ cup Melted butter or coconut oil
  • 1 teaspoon Vanilla extract
  • ½ cup Unsweetened applesauce
  • 1 cup Diced apples Peeled and chopped
  • ¼ cup Chopped walnuts Optional

Instructions

  • Preheat oven to 375°F (190°C)
  • Whisk oats, flour, sugar, baking powder, cinnamon, salt
  • Combine egg, milk, butter/oil, vanilla, applesauce
  • Fold wet into dry until just mixed
  • Stir in apples and walnuts
  • Let batter sit 10 minutes
  • Scoop batter ¾ full into muffin tin
  • Bake 18–22 mins, until golden and toothpick comes out clean
  • Cool 5 mins in pan, then transfer to rack
