Instructions
Preheat oven to 375°F (190°C)
Whisk oats, flour, sugar, baking powder, cinnamon, salt
Combine egg, milk, butter/oil, vanilla, applesauce
Fold wet into dry until just mixed
Stir in apples and walnuts
Let batter sit 10 minutes
Scoop batter ¾ full into muffin tin
Bake 18–22 mins, until golden and toothpick comes out clean
Cool 5 mins in pan, then transfer to rack
