Ingredients

Dry Ingredients

  • cups all-purpose flour
  • teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves

Wet Ingredients

  • 1 cup vegetable oil
  • 1 cup honey
  • ½ cup brown sugar packed
  • ½ cup white sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract

Fruits & Add-ins

  • ½ cup strong brewed coffee or tea cooled
  • 2 cups grated tart apples
  • 1 tablespoon lemon juice
  • ½ cup chopped walnuts or pecans

Instructions

  • Preheat oven and grease pan
  • Combine wet and dry ingredients separately
  • Gently fold in apples and nuts
  • Pour batter and bake until toothpick clean
  • Let rest 15 min, transfer to rack
  • Brush warm cake with honey
  • Keep in airtight container

Notes

This cake gets even better the next day. Store in an airtight container at room temperature for up to 5 days.
