Ingredients

  • 3 ½ cups all-purpose flour Bread flour works too for chewier texture
  • 1 tablespoon sugar Feeds the yeast
  • 1 ½ teaspoon salt Fine sea salt preferred
  • 1 packet active dry yeast ~2 ¼ tsp
  • 1 ¼ cups warm water Around 110°F
  • 1 tablespoon olive oil Adds moisture and richness
  • 1 ½ cups Asiago cheese Shredded aged preferred
  • 1 teaspoon black pepper Optional, for extra flavor
  • 1 tablespoon fresh rosemary Optional, finely chopped
  • 1 clove garlic Minced, optional

Instructions

  • Mix flour, sugar, salt, and yeast in a bowl, then add warm water and olive oil. Stir to combine.
  • Knead until smooth and elastic (7-10 minutes), then place in a greased bowl, cover, and let rise until doubled (~90 minutes).
  • Punch down dough, flatten into a rectangle, and sprinkle most of the shredded Asiago cheese on top.
  • Roll the dough tightly, shape into a loaf, and place on a baking sheet. Let rise again for 30-45 minutes.
  • Preheat oven to 425°F. Score the top of the loaf and sprinkle with remaining cheese.
  • Bake for 25-30 minutes until golden brown and crusty. Cool on a wire rack before slicing.
