Ingredients

  • 3 cups Granulated sugar
  • 1.5 cups Water Divided
  • 1 cup Cornstarch
  • 1 teaspoon Cream of tartar Prevents crystallization
  • 2 teaspoon Rose water Or lemon/orange blossom
  • few drops Red food coloring Optional
  • 0.5 cup Powdered sugar For dusting
  • 1 cup Chopped pistachios Optional (for nut variation)
  • 1 tablespoon Lemon juice For lemon version
  • 1 teaspoon Lemon zest Optional

Instructions

  • Line and dust the pan.
  • Boil sugar and water to 240°F.
  • Mix cornstarch, cream of tartar, and water.
  • Slowly whisk cornstarch mix into syrup.
  • Cook and stir for 45–60 minutes until thick and golden.
  • Stir in flavorings and coloring.
  • Pour into pan and smooth the top.
  • Cool for at least 3 hours, then cut into squares.
  • Dust with powdered sugar before serving.
