Ingredients

  • 2 ripe avocados mashed smooth
  • 2 large eggs room temperature
  • 0.5 cup milk dairy or plant-based
  • 1 teaspoon vanilla extract
  • 1.5 cup all-purpose flour
  • 0.5 cup granulated sugar adjust to taste
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 tablespoon lemon juice fresh

Instructions

  • Preheat oven to 350°F (175°C)
  • Mash avocados with lemon juice
  • Add eggs, milk, and vanilla
  • Whisk flour, sugar, baking powder, baking soda, and salt
  • Add dry to wet ingredients
  • Stir just until combined
  • Pour batter into loaf pan
  • Bake 50–60 mins until done
  • Cool in pan for 10 mins
  • Transfer to wire rack to finish cooling
