Ingredients

  • 3 medium Ripe bananas Very spotty for best flavor
  • 1 ½ cups All-purpose flour
  • ½ cup Cocoa powder Unsweetened
  • ½ cup Granulated sugar
  • ½ cup Brown sugar Packed
  • 2 large Eggs Room temperature
  • ½ cup Butter Melted (or vegetable oil)
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Baking soda
  • ½ teaspoon Baking powder
  • ¼ teaspoon Salt
  • ¾ cup Chocolate chips Optional mix-in
  • ¼ cup Greek yogurt or sour cream Adds moisture

Instructions

  • Preheat the oven to 350°F (175°C). Line your baking pan with parchment paper.
  • Mash the ripe bananas in a large mixing bowl until smooth.
  • Add eggs, melted butter (or oil), yogurt or sour cream, and vanilla extract. Whisk until combined.
  • Add both sugars and mix until smooth.
  • In a separate bowl, sift together flour, cocoa powder, baking soda, baking powder, and salt.
  • Gradually fold the dry ingredients into the wet mixture using a spatula until just combined.
  • Stir in the chocolate chips if using.
  • Pour the batter into the prepared pan and spread evenly. Bake for 30 minutes or until a toothpick inserted comes out mostly clean.
  • Cool on a wire rack for 10 minutes.
  • Slice into 12 squares and enjoy.

Notes

Use very ripe bananas for the best flavor and texture. You can substitute the chocolate chips with chopped nuts for a crunchy twist.
