Instructions
Mix crumbs, butter, and sugar for crust.
Press crust mixture into lined 9x13 pan.
Beat cream cheese until smooth using electric mixer.
Mix in eggs, vanilla, and sugar for filling.
Pour filling onto crust and smooth evenly.
Dice apples and cook in skillet with brown sugar, cinnamon, nutmeg, and a pinch of salt.
Stir in caramel sauce and heavy cream.
Spread apple-caramel topping over cheesecake filling.
Bake at 325°F (160°C) for 40 minutes.
Cool to room temperature on wire rack.
Chill in refrigerator for 4 hours before slicing.
Notes
Best served chilled with an extra drizzle of caramel. These bars hold up well and are great for make-ahead desserts.
