Instructions
Preheat oven to 350°F and prepare cake pans with parchment paper.
Drain, chop, and pat dry the maraschino cherries.
Cream together butter and sugar until light and fluffy.
Add eggs one at a time, then mix in vanilla and almond extract.
Alternate adding the flour mixture and milk to the batter.
Fold in chopped cherries and cherry juice (and food coloring, if using).
Divide batter between pans and bake for 25–30 minutes or until a toothpick comes out clean.
Let cakes cool in pans for 10 minutes, then transfer to wire racks.
Frost the cakes once completely cooled using cream cheese frosting.
Notes
This cherry chip cake is nostalgic and versatile – substitute the food coloring or cherries as desired. Ideal for birthdays or spring celebrations!
