Ingredients

  • 2 ¼ cups All-purpose flour spooned & leveled
  • 1 cup Unsalted butter softened
  • ½ cup Granulated sugar
  • ½ cup Brown sugar packed
  • 2 large Eggs room temp
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • 1 cup Fresh or dried cherries chopped, patted dry if fresh
  • ½ teaspoon Almond extract optional, for extra flavor
  • ½ cup White chocolate chips optional mix-in
  • ½ cup Chopped almonds optional, for crunch

Instructions

  • Cream the softened butter with granulated and brown sugar using a mixer until light and fluffy.
  • Add the eggs and vanilla extract (and almond extract, if using). Beat until well combined.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually add dry ingredients to wet mixture. Stir in cherries and any mix-ins like white chocolate chips or almonds.
  • Chill dough for 30 minutes if desired for thicker cookies.
  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper and scoop dough onto sheets using a cookie scoop.
  • Bake for 10–12 minutes until edges are set and centers are soft. Do not overbake.
  • Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, pat fresh cherries dry before using to prevent excess moisture. Dough chilling helps with cookie thickness but is optional.
