Instructions
Cream the softened butter with granulated and brown sugar using a mixer until light and fluffy.
Add the eggs and vanilla extract (and almond extract, if using). Beat until well combined.
In another bowl, whisk together the flour, baking soda, and salt.
Gradually add dry ingredients to wet mixture. Stir in cherries and any mix-ins like white chocolate chips or almonds.
Chill dough for 30 minutes if desired for thicker cookies.
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper and scoop dough onto sheets using a cookie scoop.
Bake for 10–12 minutes until edges are set and centers are soft. Do not overbake.
Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For best results, pat fresh cherries dry before using to prevent excess moisture. Dough chilling helps with cookie thickness but is optional.
