Instructions
Preheat the oven to 350°F (175°C). Grease or line a 9x13-inch baking pan with parchment paper.
In a bowl, whisk together flour, baking powder, salt, cinnamon, and cream of tartar.
In another bowl, cream together softened butter, granulated sugar, and brown sugar using an electric mixer until fluffy.
Add eggs and vanilla extract to the butter mixture and mix until combined.
Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Spread the dough evenly in the prepared pan using an offset spatula. Sprinkle additional cinnamon sugar on top.
Bake for 22–25 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
Allow to cool in the pan for 30 minutes before cutting into bars.
Notes
For extra flavor, mix a tablespoon of cinnamon with two tablespoons of sugar for topping. Bars store well in an airtight container for up to 4 days.
