Equipment

  • 1 Muffin tin (12-cup) Greased
  • 1 Electric mixer Stand or hand mixer
  • 2 Mixing bowls Large
  • 1 Measuring cups/spoons 1 set
  • 1 Cookie scoop Or tablespoon
  • 1 Small spoon For shaping cups
  • 1 Cooling rack Wire

Ingredients

  • 2 ¼ cups All-purpose flour
  • 1 cup Butter Softened
  • ¾ cup Brown sugar Packed
  • ¼ cup Granulated sugar
  • 2 Eggs Room temperature
  • 2 teaspoon Vanilla extract
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • 1 ½ cups Chocolate chips Or desired mix-ins
  • Filling of choice Cheesecake, mousse, etc.

Instructions

  • Make dough by creaming butter and sugars, then mixing in eggs and vanilla. Add dry ingredients and mix until combined. Stir in chocolate chips.
  • Use cookie scoop to portion dough into greased muffin tin. Use small spoon to shape into cup forms.
  • Bake at 350°F (175°C) for 12–15 minutes. Reshape center if needed while warm.
  • Cool completely on wire rack.
  • Fill each cup with desired filling and garnish as preferred.

Notes

Cookie cups can be made ahead and stored unfilled. Customize with your favorite fillings for any occasion.
