  • 2 Large eggs Room temperature

  • 1 teaspoon Vanilla extract
  • ½ teaspoon Baking soda
  • ¼ teaspoon Salt
  • ¼ cup Mini dark chocolate chips Optional

Instructions

  • Preheat oven to 350°F (175°C)
  • Line baking pan with parchment paper
  • Blend cottage cheese until smooth
  • Add eggs, maple syrup, vanilla; blend
  • Whisk cocoa, almond flour, baking soda, salt
  • Fold dry mix into wet mixture
  • Stir in chocolate chips
  • Let batter rest 10 minutes
  • Pour into pan and bake 25–30 minutes
  • Cool in pan before cutting
