Ingredients

  • 1 cup cottage cheese Small-curd preferred
  • 2 large eggs
  • 1 teaspoon vanilla extract Pure
  • cups all-purpose flour Or almond flour for gluten-free
  • teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon powder Optional
  • cup sweetener Honey, maple syrup, or sugar substitute
  • ½ cup chocolate chips Or dried fruit / mix-ins
  • 1 teaspoon lemon zest Optional

Instructions

  • Preheat oven to 350°F (175°C) and line baking sheet.
  • Mix cottage cheese, eggs, and vanilla extract.
  • Whisk dry ingredients separately.
  • Combine wet and dry mixtures.
  • Fold in sweetener and chocolate chips.
  • Scoop dough onto baking sheet.
  • Bake for 12–15 minutes until golden at edges.
  • Cool 5 minutes then transfer to rack.

Notes

Optional chilling of the dough for 30 minutes results in softer, chewier cookies.
