Instructions
Preheat oven to 350°F (175°C) and line baking sheet.
Mix cottage cheese, eggs, and vanilla extract.
Whisk dry ingredients separately.
Combine wet and dry mixtures.
Fold in sweetener and chocolate chips.
Scoop dough onto baking sheet.
Bake for 12–15 minutes until golden at edges.
Cool 5 minutes then transfer to rack.
Notes
Optional chilling of the dough for 30 minutes results in softer, chewier cookies.
