Ingredients

Cookie Dough

  • 1.5 cups All-purpose flour
  • 0.5 cup Unsalted butter softened
  • 0.5 cup Brown sugar
  • 1 Large egg
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 2 tablespoon Milk

Date Filling

  • 1 cup Medjool dates pitted and chopped
  • 0.25 cup Chopped walnuts optional
  • 0.5 teaspoon Cinnamon
  • 0.25 cup Water for cooking dates

Instructions

  • In a medium saucepan, combine chopped Medjool dates, water, and cinnamon. Cook over medium heat, stirring occasionally, until the dates are soft and the mixture thickens. Remove from heat and stir in chopped walnuts. Let the filling cool to room temperature.
  • In a large mixing bowl, cream together softened unsalted butter and brown sugar using a stand mixer or hand mixer until light and fluffy.
  • Beat in the large egg and vanilla extract until well combined.
  • In a separate bowl, whisk together all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Add milk to the dough, mixing until the dough comes together. If the dough is too dry, add a little more milk as needed.
  • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper. Using a cookie scoop or spoon, drop dough onto the prepared baking sheets. Flatten each dough ball slightly and place a small amount of the cooled date filling in the center. Fold the dough over the filling and shape into a ball, ensuring the filling is enclosed.
  • Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Remove from the oven and allow to cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  • Once the cookies have cooled completely, serve and enjoy. Store any leftovers in an airtight container at room temperature for up to 5 days.

Notes
