Instructions
Beat butter and sugars until fluffy, then add eggs and vanilla.
Combine flour, oats, spices, baking soda, and salt in a separate bowl.
Add dry ingredients to wet mixture until just combined.
Stir in diced apples and nuts (if using).
Drop dough onto parchment-lined baking sheets.
Bake at 350°F (175°C) for 12–15 minutes.
Rest 5 minutes on sheet, then transfer to wire rack to cool.
