Equipment

  • 1 9x13 inch baking pan lined with parchment
  • 2 Large mixing bowls for base & filling
  • 1 Electric mixer or wooden spoon mixing
  • 1 Measuring cups/spoons standard set
  • 1 Wire cooling rack for cooling
  • 1 Sharp knife for cutting
  • 1 Rubber spatula for spreading

Ingredients

  • 2 cups Fresh or dried cranberries chopped if large
  • 2 cups Old-fashioned rolled oats lightly toasted optional
  • 1 ½ cups All-purpose flour spoon & level
  • 1 cup Brown sugar packed
  • ½ cup White sugar granulated
  • 1 cup Butter cold, cubed
  • 2 Eggs large
  • 2 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • ½ teaspoon Salt
  • 1 cup White chocolate chips optional extra for topping
  • 1 tablespoon Orange zest finely grated
  • 1 teaspoon Cinnamon optional
  • ½ teaspoon Almond extract optional

Instructions

  • Preheat oven to 350°F (175°C). Line a 9x13 inch pan with parchment paper.
  • In a large bowl, mix flour, oats, sugars, baking powder, cinnamon, and salt.
  • Cut in cold butter using a pastry cutter or hands until crumbly. Set aside 1½ cups for topping.
  • Press remaining mixture into prepared pan. Bake for 10 minutes and remove.
  • In another bowl, whisk eggs, vanilla, almond extract, and orange zest. Stir in cranberries and white chocolate.
  • Spread filling over crust. Sprinkle reserved topping evenly over the top.
  • Bake an additional 20 minutes or until lightly golden and set.
  • Let cool in pan for 30 minutes, then transfer to wire rack to cool completely. Cut into bars.

Notes

For a more intense flavor, toast the oats beforehand. You can use fresh or dried cranberries, and adjust sweetness as needed.
