Instructions
Preheat oven to 350°F (175°C). Line a 9x13 inch pan with parchment paper.
In a large bowl, mix flour, oats, sugars, baking powder, cinnamon, and salt.
Cut in cold butter using a pastry cutter or hands until crumbly. Set aside 1½ cups for topping.
Press remaining mixture into prepared pan. Bake for 10 minutes and remove.
In another bowl, whisk eggs, vanilla, almond extract, and orange zest. Stir in cranberries and white chocolate.
Spread filling over crust. Sprinkle reserved topping evenly over the top.
Bake an additional 20 minutes or until lightly golden and set.
Let cool in pan for 30 minutes, then transfer to wire rack to cool completely. Cut into bars.
Notes
For a more intense flavor, toast the oats beforehand. You can use fresh or dried cranberries, and adjust sweetness as needed.
