Equipment

  • 1 8x8 inch baking pan lined with parchment
  • 1 Parchment paper for easy removal
  • 1 Microwave-safe bowl large
  • 1 Rubber spatula for mixing
  • 1 Sharp knife chopping pistachios
  • 1 Measuring cups

Ingredients

  • 2 cups White chocolate chips high quality
  • 1 can (14 oz) Sweetened condensed milk room temp
  • 1 box (3.4 oz) Pistachio pudding mix instant
  • 1 teaspoon Vanilla extract
  • 1 cup Shelled pistachios half chopped, half whole

Instructions

  • Line an 8x8 inch pan with parchment paper. Chop half pistachios.
  • Microwave white chocolate + condensed milk in 30-sec intervals until melted.
  • Stir in pistachio pudding mix + vanilla until smooth.
  • Spread into pan, top with pistachios.
  • Refrigerate 2–3 hours until set.

Notes

To change things up, try swapping pistachios for other nuts or adding a pinch of sea salt on top for contrast!
