In a mixing bowl, combine ground meat, cabbage, carrots, bean sprouts, green onions, soy sauce, garlic, sesame oil, and ground ginger.
Lay a wrapper flat, place 2–3 tablespoons of filling in the center, fold and roll tightly, sealing the edge with water. Repeat with remaining wrappers.
Preheat the air fryer to 375°F (190°C) for 3 minutes.
Brush or spray egg rolls with oil. Place in the air fryer basket in a single layer. Cook for 6 minutes, then flip and cook another 6 minutes or until golden and crispy.
Remove and let cool on a wire rack for 10 minutes before serving.
Notes
For a vegetarian version, omit the meat and double the vegetables. Serve with dipping sauce like sweet chili or soy sauce.
