Ingredients

Hand Pie Dough

  • 2 ½ cups All-purpose flour
  • 1 cup Unsalted butter Cold, cut into cubes
  • 6–8 tablespoon Ice water Add gradually
  • ½ teaspoon Salt
  • 1 tablespoon Sugar Optional, for sweetness

Filling & Finish

  • 1 Egg Beaten, for sealing & brushing
  • Fruit preserves or savory filling
  • 1 teaspoon Vanilla extract Optional, for sweet versions
  • 1 tablespoon Lemon juice Optional, for fruit fillings
  • 1 tablespoon Cornstarch For thickening fruit fillings
  • 2 tablespoon Milk or cream For brushing
  • 1 tablespoon Coarse sugar Optional, for sprinkling

Instructions

  • Mix dry ingredients and cut in butter.
  • Add ice water gradually and chill dough for 1 hour.
  • Roll dough and cut into circles using round cutter or bowl.
  • Fill and fold dough circles over the filling.
  • Seal edges with fork and brush with egg wash.
  • Bake at 375°F (190°C) for 25 minutes or until golden brown.
  • Cool on wire racks before serving.

Notes

Fillings can be sweet or savory — use what you have! Fruit preserves, seasoned vegetables, or meats all work well.
