Instructions
Mix the dry ingredients together in a large mixing bowl: flour, sugar, baking powder, salt, and nutmeg.
Preheat oven to 350°F (175°C). Grease the muffin tin.
In a medium bowl, whisk together melted butter, egg, milk or buttermilk, and vanilla extract. Pour into dry ingredients and mix until just combined.
Fill each muffin cup about ¾ full with batter.
Bake for 20–25 minutes, or until golden and a toothpick comes out clean.
Let muffins cool in the tin for 5 minutes, then transfer to a wire rack.
Melt the butter for coating in a small bowl.
In another small bowl, mix the cinnamon and sugar for coating.
Dip each warm muffin in melted butter, then roll in cinnamon sugar until coated.
Serve warm and enjoy!
Notes
These are best served warm, but can be stored in an airtight container for up to 2 days. Reheat slightly before serving.
