Instructions
Sift almond flour, powdered sugar, cocoa powder 3x
Line trays and prep piping bag
Whip egg whites, slowly add sugar to stiff peaks
Fold dry into meringue until batter flows like lava
Pipe 1.5" circles, tap tray, pop air bubbles
Let shells dry until skin forms
Bake at 300°F, rotate halfway through
Heat cream, pour over chocolate, add butter & vanilla
Pipe ganache into cooled shells and sandwich
