Instructions
Preheat oven to 375°F and butter/flour madeleine pan
Beat eggs and sugar until pale and thick
Mix in lemon zest, juice, and vanilla
Fold in sifted flour, baking powder, and salt
Gently fold in melted butter
Cover and refrigerate batter for 1 hour
Spoon batter into molds ¾ full
Bake 10–12 minutes until golden and springy
Turn out immediately onto wire rack and cool completely
Dip in lemon glaze if desired and let set on rack
