  • 2 Large eggs Room temperature
  • ½ cup Granulated sugar
  • 1 tablespoon Lemon zest Freshly grated
  • 2 tablespoon Lemon juice Freshly squeezed
  • ½ teaspoon Vanilla extract
  • ¾ cup All-purpose flour Sifted
  • ½ teaspoon Baking powder
  • ¼ teaspoon Salt
  • ½ cup Unsalted butter Melted and slightly cooled

Optional Lemon Glaze

  • 1 cup Powdered sugar Sifted
  • 3-4 tablespoon Lemon juice Fresh
  • 1 tablespoon Lemon zest
  • Salt Pinch

Instructions

  • Preheat oven to 375°F and butter/flour madeleine pan
  • Beat eggs and sugar until pale and thick
  • Mix in lemon zest, juice, and vanilla
  • Fold in sifted flour, baking powder, and salt
  • Gently fold in melted butter
  • Cover and refrigerate batter for 1 hour
  • Spoon batter into molds ¾ full
  • Bake 10–12 minutes until golden and springy
  • Turn out immediately onto wire rack and cool completely
  • Dip in lemon glaze if desired and let set on rack
