  • 1 Biscuit cutter or drinking glass Sharp, straight edge
  • 1 Baking sheet Lined with parchment

Ingredients

  • 2 ½ cups Gluten-free flour blend Must include xanthan gum
  • ½ cup Unsalted butter Cold, cubed
  • 1 tablespoon Baking powder
  • 1 teaspoon Salt
  • 1 tablespoon Sugar Optional, for balance
  • 1 cup Buttermilk Cold

Instructions

  • Preheat oven to 425°F, whisk flour, baking powder, salt, sugar.
  • Add cold butter cubes, cut in until coarse crumbs form.
  • Pour in buttermilk, gently stir until dough comes together.
  • Pat dough into rectangle, fold once for layers.
  • Pat to ¾-inch thick, cut biscuits straight down.
  • Place on sheet, bake 15–17 min until golden.
