Instructions
Preheat oven and prepare pans by greasing and flouring two 9-inch cake pans.
Whisk together the dry ingredients: gluten-free flour blend, almond flour, tapioca starch, xanthan gum, baking powder, and salt.
Cream the softened butter and granulated sugar until fluffy.
Add eggs one at a time, then stir in vanilla extract.
Alternate adding the dry ingredients and warm milk, mixing until just combined.
Fold in rainbow sprinkles with a rubber spatula.
Divide batter evenly between pans and smooth the tops.
Bake at 350°F (175°C) for 25–30 minutes until a toothpick comes out clean.
Cool completely on a wire rack before frosting with cream cheese frosting.
