Ingredients

  • 1 cup Gluten-free flour blend
  • ½ cup Almond flour
  • ¼ cup Tapioca starch
  • 1 teaspoon Xanthan gum
  • 1 tablespoon Baking powder
  • ½ teaspoon Salt
  • ¾ cup Unsalted butter Softened
  • 1 cup Granulated sugar
  • 3 Large eggs Room temperature
  • 2 teaspoon Vanilla extract Bloomed in warm milk (optional)
  • ¾ cup Whole milk Warmed for vanilla blooming
  • cup Rainbow sprinkles Gel-based preferred
  • 1 cup Powdered sugar For frosting
  • 4 oz Cream cheese For frosting
  • ¼ cup Heavy cream For frosting

Instructions

  • Preheat oven and prepare pans by greasing and flouring two 9-inch cake pans.
  • Whisk together the dry ingredients: gluten-free flour blend, almond flour, tapioca starch, xanthan gum, baking powder, and salt.
  • Cream the softened butter and granulated sugar until fluffy.
  • Add eggs one at a time, then stir in vanilla extract.
  • Alternate adding the dry ingredients and warm milk, mixing until just combined.
  • Fold in rainbow sprinkles with a rubber spatula.
  • Divide batter evenly between pans and smooth the tops.
  • Bake at 350°F (175°C) for 25–30 minutes until a toothpick comes out clean.
  • Cool completely on a wire rack before frosting with cream cheese frosting.
