  • 1 Rolling pin For flattening the dough
  • 2 Parchment paper For rolling and baking

  • 1 Fork To make perforations
  • 2–3 Baking sheets Lined with parchment
  • 1 Wire rack For cooling the crackers

Ingredients

  • 1 cup Almond flour Finely ground
  • ½ cup Brown rice flour
  • ¼ cup Tapioca starch
  • cup Coconut sugar
  • ¼ cup Pure honey Preferably raw
  • ¼ cup Unsalted butter Room temperature
  • 1 teaspoon Pure vanilla extract
  • 1 teaspoon Ground cinnamon
  • ½ teaspoon Fine sea salt
  • ½ teaspoon Baking soda
  • ½ teaspoon Xanthan gum Helps bind dough

Instructions

  • Mix dry ingredients.
  • Cream butter and honey.
  • Add vanilla extract.
  • Combine wet and dry ingredients.
  • Chill dough for 1 hour.
  • Roll and cut dough.
  • Score crackers with fork.
  • Bake at 325°F for 12–15 minutes.
  • Cool on baking sheet.
