Ingredients

Dough

  • 250 g gluten-free flour blend with xanthan gum
  • 100 g cold butter cubed
  • 1 egg yolk
  • 2 tablespoon cold water
  • 1 pinch sea salt

Filling

  • 400 g mincemeat filling quality brand or homemade
  • 2 tablespoon maple syrup optional
  • 1 teaspoon mixed spice
  • 0.5 teaspoon cinnamon
  • 1 orange zest from one orange

Finish

  • 1 egg beaten, for glazing
  • powdered sugar for dusting

Instructions

  • Mix flour, salt, and cold butter until crumbly
  • Add egg yolk and cold water to form dough
  • Chill dough for 30 minutes
  • Combine mincemeat, maple syrup, and spices
  • Roll dough to 3mm, cut circles, add filling
  • Seal with fork, brush with egg wash
  • Bake at 200°C (390°F) for 12–15 min
  • Cool on rack, dust with sugar
