Gluten Free Pretzels

Equipment

  • 1 Large mixing bowl
  • 1 Kitchen scale
  • 1 Stand mixer with dough hook optional
  • 1 Large pot
  • 1 Slotted spoon
  • 2 Baking sheets
  • Parchment paper
  • 1 Pastry brush

Ingredients
  

  • 3.5 cups Gluten free all-purpose flour blend with xanthan gum
  • 1.5 cups Warm water
  • 2.25 teaspoon Active dry yeast
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 0.5 cup Baking soda for boiling water
  • 1 Egg beaten, for egg wash
  • 2 tablespoon Butter melted, for brushing
  • 1 tablespoon Olive oil
  • to taste Coarse sea salt for topping

Instructions
 

  • Dissolve yeast & sugar in warm water until foamy.
  • Combine flour, salt, yeast mixture, and oil; knead until smooth.
  • Cover and let dough double for 45–60 minutes.
  • Roll into ropes and form pretzels or bites.
  • Drop into baking soda water for 30 sec per side.
  • Brush with egg and sprinkle with salt.
  • 425°F (220°C) for 12–15 minutes until golden.
  • Brush with melted butter.

Notes

Best served warm with mustard, cheese dip, or melted butter. Store leftovers in an airtight container and reheat before serving.
