  • 2 Mixing bowls For wet and dry ingredients
  • 1 Electric mixer or whisk To combine ingredients

  • 1 Wire cooling rack For cooling
  • 1 Rubber spatula For folding batter

Ingredients

  • 2 cups Whole wheat flour
  • 0.5 cup Oats Rolled oats preferred
  • 2 large Eggs Room temperature
  • 1 cup Greek yogurt Plain or vanilla
  • 0.5 cup Honey or maple syrup Natural sweetener
  • 2 medium Apples Peeled, cored, finely chopped (Granny Smith or Honeycrisp)
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Nutmeg
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Sea salt
  • 0.5 cup Walnuts or pecans Optional, chopped

Instructions

  • Preheat oven & prep pan
  • Chop apples & mix with lemon juice
  • Combine wet ingredients
  • Combine dry ingredients
  • Fold wet into dry
  • Add apples & nuts
  • Pour batter into pan
  • Bake 45–50 min
  • Cool on rack
