  • 2 Mixing bowls Large

  • 1 Apple corer/knife For dicing apples

Ingredients

  • 2 Apples Diced, fresh
  • 1 ½ cups Whole wheat flour
  • 1 cup Rolled oats
  • ½ cup Greek yogurt Plain, unsweetened
  • ½ cup Applesauce Unsweetened
  • 2 Eggs Large
  • cup Honey or maple syrup Natural sweetener
  • 1 ½ teaspoon Baking powder
  • ½ teaspoon Baking soda
  • 1 teaspoon Cinnamon Ground
  • 1 teaspoon Vanilla extract
  • ¼ teaspoon Salt
  • 2 tablespoon Coconut or olive oil Melted
  • ¼ cup Milk Dairy or non-dairy
  • ¼ cup Walnuts (optional) Chopped

Instructions

  • Preheat oven to 375°F.
  • Mix dry ingredients in a large bowl.
  • Combine wet ingredients in another bowl.
  • Fold in diced apples.
  • Divide batter into muffin cups.
  • Bake for 18–22 minutes.
  • Cool in pan for 5 minutes.
  • Transfer to rack and serve.
