Ingredients

Main Ingredients

  • 2 medium Zucchini grated & squeezed dry
  • 1 ½ cups Whole wheat flour
  • ¼ cup Unsweetened cocoa powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • ½ teaspoon Sea salt
  • ½ teaspoon Cinnamon optional
  • 2 large Eggs room temperature
  • cup Coconut oil melted
  • ½ cup Maple syrup or honey
  • ½ cup Greek yogurt plain
  • 1 teaspoon Vanilla extract
  • ½ cup Dark chocolate chips optional

Instructions

  • wash, grate, squeeze dry.
  • flour, cocoa, baking soda, powder, salt, cinnamon.
  • eggs, oil, syrup, yogurt, vanilla.
  • fold wet into dry until just mixed.
  • fold zucchini & chips into batter.
  • pour into loaf pan, bake at 350°F for 55–60 min.
  • cool 30 min before slicing.
