Ingredients

For the Cookie Dough

  • cups all-purpose flour
  • 1 cup unsalted butter softened
  • 1 cup dark brown sugar packed
  • ¼ cup granulated sugar
  • 1 large egg room temperature
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract

For the Spice Mix

  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ teaspoon baking soda

Instructions

  • Whisk dry ingredients
  • Cream butter and sugars
  • Add egg, cream, and vanilla
  • Mix in dry ingredients
  • Shape into a disc, wrap, and chill
  • Preheat oven to 350°F (175°C)
  • Roll out dough thin
  • Cut into rectangles
  • Create pattern with a fork
  • Bake for 12-14 minutes
  • Cool before serving

  • For best results, ensure dough is thoroughly chilled before rolling
  • Dough can be frozen for up to 2 months
  • Store baked cookies in airtight container for up to 2 weeks
