Ingredients

  • 2 boxes Jiffy cornbread mix
  • 1 lb Ground beef Browned and seasoned
  • 1 cup Sharp cheddar cheese Shredded
  • 2 Jalapeño peppers Diced
  • 1 can Creamed corn
  • 0.5 cup Sour cream
  • 2 Eggs
  • 0.33 cup Milk
  • 2 tablespoon Butter Melted
  • 0.5 Diced onion
  • 1 can Green chilies Drained
  • 0.5 cup Mexican cheese blend
  • 1 pkg Taco seasoning
  • Salt To taste
  • Black pepper To taste
  • 1 teaspoon Garlic powder

Instructions

  • Brown beef.
  • Add onion and sauté.
  • Season beef with taco seasoning, garlic powder, salt, and pepper.
  • Drain fat from cooked beef.
  • Mix cornbread batter with eggs, milk, sour cream, melted butter, and creamed corn in a large mixing bowl.
  • Fold in sharp cheddar, Mexican blend, diced jalapeños, and green chilies.
  • Layer cooked meat mixture in the greased baking dish.
  • Top meat with the cornbread batter mixture.
  • Bake in preheated oven at 375°F for 30 minutes, until golden brown.
  • Let cool for 10 minutes before serving.
