Ingredients

  • 2 ¼ cups All-purpose flour
  • ½ teaspoon Baking soda
  • ¼ teaspoon Salt
  • 1 cup Unsalted butter Softened
  • ½ cup Granulated sugar
  • ½ cup Light brown sugar
  • 1 Large egg
  • 2 tablespoon Fresh key lime juice
  • 1 tablespoon Key lime zest
  • 1 teaspoon Vanilla extract
  • 1 cup Powdered sugar For glaze
  • 1 ½ tablespoon Key lime juice For glaze
  • 1 teaspoon Key lime zest For glaze

Instructions

  • Preheat oven to 375°F.
  • Mix dry ingredients: flour, baking soda, and salt.
  • Cream butter and sugars until light and fluffy.
  • Add egg, lime juice, zest, and vanilla extract.
  • Combine wet and dry mixtures until just mixed.
  • Scoop dough onto baking sheets using cookie scoop.
  • Bake cookies for 8–10 minutes.
  • Cool on rack for 5 minutes then transfer to wire rack.
  • Whisk glaze ingredients: powdered sugar, lime juice, zest.
  • Glaze cookies once cooled.
  • Let glaze set for 15 minutes.
