Ingredients

  • 1 cup Unsalted butter Softened
  • 1 ½ cups Granulated sugar
  • 3 large Eggs Room temperature
  • 2 tablespoon Fresh lemon juice
  • 1 tablespoon Lemon zest Fresh
  • 1 teaspoon Pure vanilla extract
  • ½ teaspoon Lemon extract Optional, boosts flavor
  • 1 ½ cups All-purpose flour
  • ½ teaspoon Baking powder
  • ¼ teaspoon Salt
  • 1 cup Powdered sugar For glaze
  • 2 tablespoon Fresh lemon juice For glaze
  • 2 oz Cream cheese Optional variation
  • 2 tablespoon Heavy cream Optional variation

Instructions

  • Preheat the oven to 350°F (175°C) and line a 9x13 inch pan with parchment paper.
  • Cream together the softened butter and granulated sugar using an electric or stand mixer.
  • Beat in the eggs, one at a time, then add lemon juice, zest, vanilla, and lemon extract (if using).
  • In a separate bowl, mix the flour, baking powder, and salt. Gradually add to the wet mixture.
  • Fold the batter gently until just combined, then pour into the prepared pan.
  • Bake for 25 minutes or until the center is set and the edges are lightly golden.
  • Let the brownies cool in the pan on a wire rack for 30 minutes.
  • Whisk together powdered sugar and lemon juice (plus optional cream cheese and heavy cream) and drizzle over cooled brownies.
