Ingredients

  • 2 ¼ cups All-purpose flour
  • 2 tablespoon Cornstarch For soft texture
  • 1 teaspoon Baking powder
  • ½ teaspoon Sea salt
  • ½ cup Lemon curd Homemade or store-bought
  • Powdered sugar For dusting

Instructions

  • Cream butter and sugar until fluffy.
  • Add eggs, zest, and vanilla; mix well.
  • Combine dry ingredients; fold into wet.
  • Chill dough for 30 minutes.
  • Preheat oven to 350°F (175°C).
  • Form balls, make indents, and fill with lemon curd.
  • Bake 12–15 min until edges are golden.
  • Cool on rack and dust with powdered sugar.
