Ingredients

  • 2 packs Cream cheese Softened to room temp
  • 1.5 cups Heavy whipping cream Whipped to stiff peaks
  • 1 cup Powdered sugar
  • 2 teaspoon Vanilla extract
  • 1.5 cups Graham cracker crumbs From ~12 graham crackers
  • 6 tablespoon Unsalted butter Melted
  • 2 tablespoon Brown sugar For crust
  • 0.5 cup Caramel sauce Plus more for drizzle
  • 0.5 cup Semi-sweet chocolate chips Melted or for garnish
  • 0.5 cup Chopped pecans Toasted if preferred
  • 1 tablespoon Unflavored gelatin Bloomed in water
  • Salt Optional for balance

Instructions

  • Crush graham crackers and mix with melted butter and brown sugar.
  • Firmly press crust into bottom of springform pan and refrigerate.
  • Beat cream cheese until smooth, then mix in powdered sugar and vanilla.
  • Bloom and dissolve unflavored gelatin; fold into cream cheese mixture.
  • Whip heavy cream to stiff peaks and gently fold into the filling.
  • Spread half the filling over crust, drizzle caramel, and sprinkle pecans.
  • Add remaining filling, smooth the top, and refrigerate for 6+ hours.
  • Slice and serve chilled with extra caramel, pecans, and chocolate if desired.

Notes

This cheesecake is best made ahead for events. You can switch up toppings to your liking – try white chocolate or toffee bits!
