Instructions
Preheat the oven to 175°C (350°F). Line a 9x13 inch baking pan with parchment paper.
Melt the dark chocolate and butter using a double boiler or microwave-safe bowl. Let cool slightly.
In a mixing bowl, combine the granulated sugar, brown sugar, and eggs. Mix until well combined.
Beat the mixture until light and fluffy. Stir in the vanilla extract.
Fold in the melted chocolate mixture. Then add the flour, cocoa powder, and salt. Mix until just combined.
Gently fold in the chopped Oreo cookies and chocolate chips if using.
Pour the batter into the prepared baking pan and smooth the top. Add additional Oreo pieces on top.
Bake for 30 minutes or until a toothpick inserted comes out with a few moist crumbs.
Let the brownies cool in the pan on a wire rack for 30 minutes.
Slice into 12 squares and serve.
Notes
For extra gooey brownies, slightly underbake them and allow to cool completely before slicing.
