Ingredients

  • 200 g Dark chocolate Chopped
  • 115 g Unsalted butter Melted
  • 100 g Granulated sugar
  • 100 g Brown sugar
  • 3 Large eggs Room temperature
  • 1 teaspoon Vanilla extract
  • 100 g All-purpose flour
  • 30 g Unsweetened cocoa powder
  • 0.5 teaspoon Salt
  • 12 Oreo cookies Chopped
  • 60 g Semi-sweet chocolate chips Optional
  • 4–6 Oreo cookies For topping

Instructions

  • Preheat the oven to 175°C (350°F). Line a 9x13 inch baking pan with parchment paper.
  • Melt the dark chocolate and butter using a double boiler or microwave-safe bowl. Let cool slightly.
  • In a mixing bowl, combine the granulated sugar, brown sugar, and eggs. Mix until well combined.
  • Beat the mixture until light and fluffy. Stir in the vanilla extract.
  • Fold in the melted chocolate mixture. Then add the flour, cocoa powder, and salt. Mix until just combined.
  • Gently fold in the chopped Oreo cookies and chocolate chips if using.
  • Pour the batter into the prepared baking pan and smooth the top. Add additional Oreo pieces on top.
  • Bake for 30 minutes or until a toothpick inserted comes out with a few moist crumbs.
  • Let the brownies cool in the pan on a wire rack for 30 minutes.
  • Slice into 12 squares and serve.

Notes

For extra gooey brownies, slightly underbake them and allow to cool completely before slicing.
