Equipment

  • 1 9x13 inch baking pan lined with parchment paper
  • 1 Parchment paper for lining pan
  • 2–3 Mixing bowls large and medium
  • 1 Electric mixer or whisk to mix filling
  • 1 Fine-mesh strainer optional, to remove seeds
  • 1 Sharp knife for cutting passion fruits
  • 1 set Measuring cups/spoons standard
  • 1 Wire cooling rack for cooling base
  • 1 Rubber spatula for spreading filling

Ingredients

Shortbread Crust

  • 2 cups all-purpose flour for crust
  • 1 cup unsalted butter cold, cubed
  • ½ cup powdered sugar for crust & dusting

Filling

  • 1 cup fresh passionfruit pulp strained if seedless preferred
  • 1 cup granulated sugar for filling
  • 3 large eggs whisked
  • 1 teaspoon vanilla extract optional
  • ¼ teaspoon salt
  • ¼ cup heavy cream
  • 1 tablespoon lemon juice
  • 2 tablespoon cornstarch thickener

Garnish

  • 2 tablespoon coconut flakes garnish
  • 1 teaspoon lime zest garnish

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine flour, cold butter, and powdered sugar. Press into a parchment-lined 9x13 inch pan.
  • Bake crust for 20 minutes until lightly golden. Let cool on a wire rack.
  • Scoop out the passionfruit pulp and strain if desired to remove seeds.
  • In a mixing bowl, whisk together eggs, sugar, passionfruit pulp, heavy cream, lemon juice, vanilla, salt, and cornstarch.
  • Pour the filling over the cooled crust and spread evenly with a rubber spatula.
  • Bake again for about 20 minutes, until the filling is set.
  • Cool completely on a wire rack.
  • Chill in the refrigerator for at least 2 hours before slicing.
  • Cut into squares and garnish with coconut flakes and lime zest.

Notes

For a smoother texture, strain the passionfruit pulp. Feel free to adjust sweetness or citrus to your taste.
