Ingredients
Shortbread Crust

Filling

fresh passionfruit pulp
strained if seedless preferred

Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine flour, cold butter, and powdered sugar. Press into a parchment-lined 9x13 inch pan.
Bake crust for 20 minutes until lightly golden. Let cool on a wire rack.
Scoop out the passionfruit pulp and strain if desired to remove seeds.
In a mixing bowl, whisk together eggs, sugar, passionfruit pulp, heavy cream, lemon juice, vanilla, salt, and cornstarch.
Pour the filling over the cooled crust and spread evenly with a rubber spatula.
Bake again for about 20 minutes, until the filling is set.
Cool completely on a wire rack.
Chill in the refrigerator for at least 2 hours before slicing.
Cut into squares and garnish with coconut flakes and lime zest.
Notes
For a smoother texture, strain the passionfruit pulp. Feel free to adjust sweetness or citrus to your taste.
