Ingredients

Crust

  • 1 ½ cups Graham cracker crumbs
  • ¼ cup Melted butter
  • 2 tablespoon Granulated sugar
  • 1 pinch Salt Optional

Filling

  • 24 oz Cream cheese Softened
  • ¾ cup Granulated sugar
  • 3 Eggs Room temperature
  • ½ cup Sour cream
  • 1 teaspoon Vanilla extract
  • 2 tablespoon All-purpose flour

Peach Topping

  • 2 cups Fresh peaches Peeled and sliced
  • ¼ cup Brown sugar
  • 1 tablespoon Cornstarch
  • 1 tablespoon Lemon juice
  • ½ teaspoon Vanilla extract
  • ¼ teaspoon Cinnamon
  • 1 pinch Nutmeg

Instructions

  • Mix crust ingredients, press into pan, and bake for 10 minutes.
  • Beat cream cheese and sugar, add eggs, sour cream, vanilla, and flour.
  • Pour filling into crust, smooth top evenly.
  • Simmer peach topping ingredients until thickened. Let cool.
  • Bake cheesecake in water bath for 55–65 mins.
  • Cool gradually, then refrigerate overnight.
  • Top with peach topping and serve.

Notes

Chill for at least 8 hours or overnight for the best texture. Caramelized peach topping adds a summery finish.
