Ingredients

For the Cookie Dough

  • cups all-purpose flour
  • 1 cup shelled pistachios finely ground
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 1 teaspoon baking powder
  • ½ teaspoon salt

For Topping

  • ½ cup whole pistachios roughly chopped

Instructions

Prepare Pistachios

  • Process 1 cup pistachios until finely ground
  • Roughly chop remaining ½ cup for topping

Mix Dry Ingredients

  • Whisk together flour, ground pistachios, baking powder, and salt
  • Set aside

Cream Butter & Sugar

  • Beat butter until creamy (1 minute)
  • Add sugar, beat until fluffy (3 minutes)
  • Add eggs one at a time
  • Mix in vanilla and almond extracts

Make Dough

  • Gradually add dry ingredients to wet mixture
  • Mix until just combined
  • Chill dough for 2 hours or overnight

Bake Cookies

  • Preheat oven to 350°F (175°C)
  • Roll dough into 1-inch balls
  • Top with chopped pistachios
  • Bake 12-14 minutes until edges are golden
