Ingredients

Dry Ingredients

  • 2 cups All-purpose flour sifted
  • 2 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Garlic powder

Wet Ingredients

  • 1 cup Milk
  • 0.25 cup Vegetable oil
  • 2 large Eggs beaten

Toppings

  • 1.5 cups Mozzarella cheese shredded, divided
  • 0.5 cup Pizza sauce
  • 0.5 cup Mini pepperoni sliced
  • 0.25 cup Parmesan cheese grated
  • 2 tablespoon Fresh herbs chopped, for garnish

Instructions

  • Whisk together the flour, baking powder, salt, Italian seasoning, and garlic powder.
  • In a separate bowl, combine milk, oil, and beaten eggs.
  • Fold wet ingredients into dry. Add 1 cup of mozzarella cheese and stir to combine.
  • Grease muffin tin. Fill each cup ⅔ full with batter using a spoon or scoop.
  • Add 1 teaspoon pizza sauce to each muffin.
  • Top with remaining mozzarella, mini pepperoni, and Parmesan cheese.
  • Bake in preheated oven at 375°F (190°C) for 18–20 minutes or until golden and cooked through.
  • Cool muffins on a wire rack for 5 minutes before serving. Garnish with fresh herbs.

Notes

Feel free to customize toppings with your favorite pizza ingredients like olives, bell peppers, or mushrooms.
