Instructions
Whisk together the flour, baking powder, salt, Italian seasoning, and garlic powder.
In a separate bowl, combine milk, oil, and beaten eggs.
Fold wet ingredients into dry. Add 1 cup of mozzarella cheese and stir to combine.
Grease muffin tin. Fill each cup ⅔ full with batter using a spoon or scoop.
Add 1 teaspoon pizza sauce to each muffin.
Top with remaining mozzarella, mini pepperoni, and Parmesan cheese.
Bake in preheated oven at 375°F (190°C) for 18–20 minutes or until golden and cooked through.
Cool muffins on a wire rack for 5 minutes before serving. Garnish with fresh herbs.
Notes
Feel free to customize toppings with your favorite pizza ingredients like olives, bell peppers, or mushrooms.
