Ingredients

  • 1 cup chocolate protein powder High-quality recommended
  • 0.5 cup almond flour Gluten-free base
  • 0.33 cup cocoa powder Unsweetened
  • 0.5 cup Greek yogurt Plain, nonfat or low-fat
  • 2 eggs Room temperature
  • 0.33 cup natural sweetener e.g., honey, maple syrup, or stevia
  • 1 teaspoon vanilla extract For flavor
  • 1 teaspoon baking powder Leavening agent
  • salt Pinch; enhances flavor
  • 0.25 cup dark chocolate chips Mix-in
  • 2 tablespoon coconut oil Melted
  • 2 tablespoon almond butter Creamy
  • 0.25 cup unsweetened applesauce Adds moisture

Instructions

  • Preheat oven to 350°F (175°C) and line an 8x8 inch pan with parchment paper.
  • In a large bowl, whisk together chocolate protein powder, almond flour, cocoa powder, baking powder, and salt.
  • In another bowl, beat the eggs, then mix in Greek yogurt, sweetener, vanilla, coconut oil, almond butter, and applesauce.
  • Combine wet and dry ingredients. Fold in dark chocolate chips.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 25–30 minutes, or until a toothpick comes out mostly clean.
  • Cool for at least 30 minutes on a wire rack before slicing into 12 squares.

Notes

Store leftovers in an airtight container in the fridge for up to 5 days, or freeze for longer shelf life. Customize with nuts or other mix-ins as desired.
