Ingredients

  • 1 cup All-purpose flour
  • ¾ cup Granulated sugar
  • 2 teaspoon Baking powder
  • ¼ teaspoon Salt
  • 1 package Vanilla pudding mix Instant, not cook-and-serve
  • 1 cup Whole milk Room temperature
  • ¼ cup Unsalted butter Melted
  • 2 Large eggs Room temperature
  • 1 teaspoon Vanilla extract Pure
  • ½ cup Brown sugar For top layer
  • ¼ cup Cocoa powder Unsweetened
  • 1.5 cups Hot water Poured over before baking
  • ½ cup Heavy cream Optional, for serving
  • 2 tablespoon Powdered sugar Optional, for garnish

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
  • Stir in the vanilla pudding mix until evenly combined.
  • In another bowl, mix together milk, melted butter, eggs, and vanilla extract. Combine wet and dry ingredients and mix until smooth.
  • Pour the batter into the greased 9x13 inch baking dish and spread evenly.
  • Sprinkle brown sugar and cocoa powder evenly over the batter.
  • Gently pour the hot water over the top—do not stir.
  • Bake for 35–40 minutes until the top is set and the bottom is saucy.
  • Let the pudding cake rest for 10 minutes before serving warm with cream and powdered sugar if desired.

Notes

Serve warm and fresh. The cake forms its own sauce underneath as it bakes—no need to flip or stir after adding water.
