Instructions
Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper.
In a large bowl, whisk together oats, flour, brown sugar, baking soda, salt, and spices.
In another bowl, mix pumpkin puree, eggs, melted butter, vanilla extract, and maple syrup until smooth.
Gradually add dry ingredients to wet, stirring until just combined.
Fold in chocolate chips and chopped walnuts, if using.
Spread batter evenly into prepared pan. Sprinkle pumpkin seeds on top if desired.
Bake for 25–30 minutes, or until a toothpick inserted comes out clean.
Cool completely on a wire rack before cutting into bars.
Notes
These bars store well in an airtight container for up to 5 days. They can also be frozen individually for quick snacks.
