Ingredients

  • 2 cups Rolled oats old-fashioned
  • 1 cup Pumpkin puree not pie filling, drained
  • 1 cup All-purpose flour spoon & level
  • 0.75 cup Brown sugar packed
  • 2 Eggs large, room temp
  • 1 teaspoon Vanilla extract pure
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Salt
  • 0.5 cup Butter melted & cooled
  • 2 tablespoon Maple syrup pure
  • 1 cup Mini chocolate chips optional
  • 0.5 cup Chopped walnuts optional
  • 2 tablespoon Pumpkin seeds optional topping

Instructions

  • Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper.
  • In a large bowl, whisk together oats, flour, brown sugar, baking soda, salt, and spices.
  • In another bowl, mix pumpkin puree, eggs, melted butter, vanilla extract, and maple syrup until smooth.
  • Gradually add dry ingredients to wet, stirring until just combined.
  • Fold in chocolate chips and chopped walnuts, if using.
  • Spread batter evenly into prepared pan. Sprinkle pumpkin seeds on top if desired.
  • Bake for 25–30 minutes, or until a toothpick inserted comes out clean.
  • Cool completely on a wire rack before cutting into bars.

Notes

These bars store well in an airtight container for up to 5 days. They can also be frozen individually for quick snacks.
