Ingredients

all-purpose flour
sifted

unsweetened cocoa powder
good quality

granulated sugar
adjust to taste

baking powder

milk
dairy or non-dairy

egg
beaten

melted butter
plus extra for cooking

chocolate chips
optional, semi-sweet or dark
Instructions
Combine dry ingredients (flour, cocoa, sugar, baking powder, salt) in bowl
Whisk milk, egg and melted butter together in separate bowl
Pour wet into dry, stir until just combined; some lumps OK
Fold in chocolate chips (optional)
Let batter rest 5 minutes
Heat non-stick pan over medium heat; brush with butter
Pour ~¼ cup of batter per pancake into pan
Cook until bubbles form and edges look set, ~2-3 min
Flip and cook ~1-2 min more until done
Serve warm with syrup, fruit or whipped cream
Notes
Optional chocolate chips add extra richness. You can also top with banana slices, berries or a dollop of yogurt for variation.
