Rich Chocolate Pancakes

Equipment

  • 1 Mixing bowl large
  • 1 Whisk or fork
  • 1 Non-stick frying pan medium size
  • 1 Spatula for flipping
  • 1 ladle or large spoon to pour batter

Ingredients

  • 1 ½ cups all-purpose flour sifted
  • ½ cup unsweetened cocoa powder good quality
  • 3 tablespoon granulated sugar adjust to taste
  • 2 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ¼ cups milk dairy or non-dairy
  • 1 large egg beaten
  • 2 tablespoon melted butter plus extra for cooking
  • ½ cup chocolate chips optional, semi-sweet or dark

Instructions

  • Combine dry ingredients (flour, cocoa, sugar, baking powder, salt) in bowl
  • Whisk milk, egg and melted butter together in separate bowl
  • Pour wet into dry, stir until just combined; some lumps OK
  • Fold in chocolate chips (optional)
  • Let batter rest 5 minutes
  • Heat non-stick pan over medium heat; brush with butter
  • Pour ~¼ cup of batter per pancake into pan
  • Cook until bubbles form and edges look set, ~2-3 min
  • Flip and cook ~1-2 min more until done
  • Serve warm with syrup, fruit or whipped cream

Notes

Optional chocolate chips add extra richness. You can also top with banana slices, berries or a dollop of yogurt for variation.
