Saskatoon Berry Pie

Equipment

  • 1 9-inch pie dish standard size for baking
  • 1 Rolling pin for crust
  • 1 Mixing bowl large, for filling
  • 1 Mixing bowl medium, for crust
  • 1 Wooden spoon or silicone spatula
  • 1 Pastry cutter or knife
  • 1 Measuring cups/spoons
  • 1 Pastry brush for egg wash
  • 1 Wire cooling rack for cooling
  • 1 Pie server for serving

Ingredients

  • 2 ½ cups Saskatoon berries fresh or frozen
  • 1 cup All-purpose flour for crust
  • ½ cup Brown sugar for filling
  • ¼ cup Granulated sugar adjust to taste
  • 2 tablespoon Cornstarch for thickening
  • ½ cup Butter cold, cubed
  • 1 Egg for egg wash
  • ¼ teaspoon Salt for dough
  • 1 teaspoon Vanilla extract for flavor
  • 1 teaspoon Lemon zest optional
  • ¼ teaspoon Nutmeg or cinnamon warm spice
  • 2 tablespoon Ice water as needed for dough

Instructions

  • Prepare the crust by mixing flour, salt, and cold butter until crumbly. Add ice water as needed to form dough.
  • Chill the dough in the refrigerator for 30 minutes.
  • Roll out the dough on a floured surface and place into a 9-inch pie dish.
  • In a large bowl, mix Saskatoon berries with sugars, cornstarch, vanilla, lemon zest, and spice.
  • Pour the filling into the prepared crust.
  • Add top crust, crimp edges, and cut small vents in the top.
  • Brush with beaten egg for a golden finish.
  • Bake at 375°F (190°C) for 50 minutes or until golden brown and bubbling.
  • Let cool on a wire rack for at least 3 hours to set properly.
  • Slice and serve with whipped cream or ice cream if desired.

Notes

This pie is perfect in summer when Saskatoons are in season, but frozen berries work just as well.
