Instructions
Prepare the crust by mixing flour, salt, and cold butter until crumbly. Add ice water as needed to form dough.
Chill the dough in the refrigerator for 30 minutes.
Roll out the dough on a floured surface and place into a 9-inch pie dish.
In a large bowl, mix Saskatoon berries with sugars, cornstarch, vanilla, lemon zest, and spice.
Pour the filling into the prepared crust.
Add top crust, crimp edges, and cut small vents in the top.
Brush with beaten egg for a golden finish.
Bake at 375°F (190°C) for 50 minutes or until golden brown and bubbling.
Let cool on a wire rack for at least 3 hours to set properly.
Slice and serve with whipped cream or ice cream if desired.
Notes
This pie is perfect in summer when Saskatoons are in season, but frozen berries work just as well.
