Ingredients

  • 1 cup Active sourdough starter Fed and bubbly
  • 2 cups All-purpose flour Can mix with whole wheat
  • 0.5 cup Whole wheat flour Optional for nuttier flavor
  • 0.75 cup Water Filtered, lukewarm
  • 1 teaspoon Salt
  • 1 tablespoon Olive oil Optional, for softer tortillas

Instructions

  • Combine starter, water, flour, and salt until dough forms.
  • Cover and rest dough for 30 minutes.
  • Knead for 5–7 minutes until smooth.
  • Let rise 4–8 hours until doubled.
  • Cut dough into 8–10 balls and rest 10 minutes.
  • Flatten into thin circles.
  • Heat skillet; cook 45 seconds per side.
  • Keep tortillas warm in towel.
