Ingredients

  • 1 cup all-purpose flour sifted
  • 2 large eggs beaten
  • 1 ½ cups whole milk
  • 2 tablespoon melted butter for batter
  • 2 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 cups fresh strawberries sliced
  • 4 oz cream cheese softened
  • 2 tablespoon powdered sugar for filling
  • ½ cup heavy whipping cream optional topping
  • 1 tablespoon lemon juice for strawberries
  • butter for cooking
  • Nutella, maple syrup, honey optional

Instructions

  • Whisk flour, salt, eggs, milk, butter, vanilla, sugar → rest 30 mins.
  • Macerate strawberries with sugar & lemon. Beat cream cheese with sugar & vanilla.
  • Heat skillet, butter lightly, pour ¼ cup batter, swirl, cook, flip.
  • Fill crepes with cream cheese & strawberries, fold, serve warm.

Notes

For best texture, let the crepe batter rest before cooking. You can customize with Nutella, maple syrup, or honey. Whipped cream topping is optional but delicious.
