  • ¼ teaspoon Xanthan gum Optional, for a softer texture

For the Glaze (Optional)

  • ½ cup Powdered erythritol For a smooth glaze
  • 2 tablespoon Lemon juice Adjust for desired thickness
  • 1 teaspoon Lemon zest For extra citrus flavor

Instructions

  • Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
  • Whisk together almond flour, coconut flour, baking powder, salt, and lemon zest.
  • In another bowl, cream butter and sweetener, then add egg, lemon juice, and vanilla extract.
  • Gradually mix dry ingredients into the wet until a dough forms.
  • Refrigerate dough for 1 hour to enhance flavor and texture.
  • Scoop dough onto baking sheet and flatten slightly.
  • Bake for 12-15 minutes until edges are golden.
  • Let cookies cool for 5 minutes on the sheet, then transfer to a wire rack.
  • Mix powdered erythritol and lemon juice, then drizzle over cooled cookies.
