Instructions
Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
Whisk together almond flour, coconut flour, baking powder, salt, and lemon zest.
In another bowl, cream butter and sweetener, then add egg, lemon juice, and vanilla extract.
Gradually mix dry ingredients into the wet until a dough forms.
Refrigerate dough for 1 hour to enhance flavor and texture.
Scoop dough onto baking sheet and flatten slightly.
Bake for 12-15 minutes until edges are golden.
Let cookies cool for 5 minutes on the sheet, then transfer to a wire rack.
Mix powdered erythritol and lemon juice, then drizzle over cooled cookies.
